Kyle’s Dahl with Onion & Garlic Tarka

Serve with Kyle’s Butter Chicken!

Ingredients – bold available from WnP!
1 Cup Moong Dahl
4-5 Cups Water
4 tsp Turmeric
150g Butter (or Coconut Oil for Vegans!)
1 Brown Onion – slices
1 Head of Garlic – Peeled and Sliced
Thumb sized piece of Ginger
2 Tablespoons Mustard Seeds
2 Tablespoons Cumin Seeds
1 Teaspoon Ground Coriander
Fresh Coriander to garnish
1. Rinse Moong Dahl under running water until clear
2. Add to a medium sized pot, add water and turmeric and bring to a boil (do not salt)
3. Cook for ~40 minutes, or until desired consistency is reached. Add more water if it gets dry.
4. Meanwhile, melt butter in a frypan over medium heat. Add Onion and cook for 7-8 minutes until soft and turning golden.
5. Add Garlic and Ginger and cook for 1 minute
6. Add spices and toast for 30 seconds or until fragrant (take care not to burn)
7. Serve Dahl in a large bowl topped with Onion & Garlic Tarka spread over the top. Season with Salt & Pepper to taste and garnish with Fresh Coriander.
Note: This is a simplified version of this recipe. You can include curry leaves, kasuri methi, fresh or dried chilies and more to really bump up the flavour!
