Green Goodness! Pumpkin Kernels, also known as pepitas, have a bright green colour and are encased in a hard white shell. Once cracked, the flat, elongated oval-shaped seed is revealed and can add fantastic colour and a crunchy punch to many dishes, especially salads! Once toasted, pumpkin kernels take on a beautiful golden tinge and a delicious roasted flavour. When raw, they have a slightly chewy texture and a sweet nutty flavour.
