You need to add:
125g Butter (not margarine).
150g Copha – check availability in our fridge
Method:
Line a 17cm x 29cm slice or lamington pan with bakers paper. Melt butter and condensed milk together, add coconut, biscuit crumbs and 2 tsp ginger. Press into tin and refrigerate until firm. Melt copha and choc buttons together, add fruit & nut mix with 1tsp ginger, mix well. Pour over base and refrigerate until set. Cut into squares to serve.
Optional extra: Add a small quantity of finely diced glace ginger with the topping.
Suggestion: Use our disposable cake moulds to make as gifts! You will be able to get 3 – 4 depending on the mould used.
