Festive Cake

Fruit Cake Mix
You need to add:
3 eggs
3 Tbsp Sherry, Rum or Brandy
Method:
Grease sides and base of a 9 inch tin and line with a layer of greased paper or baking paper. Place fruit & nuts with other ingredients into a basin. Mix thoroughly ensuring that all the cake mix has dissolved. Place into prepared tin, pressing flat with the back of a spoon. Bake in a slow oven for about 2 hours. Test after 1 ½ hours. Times will vary due to differences in ovens. Leave in tin for 10 minutes. Loosen around edges and turn onto a rack to cool. Remove paper. When completely cold wrap in greaseproof paper, then in foil. Store in a cool dark place. Will keep for at least 2 to 3 months.
