Falafel

Mix Falafel mix and water to a sloppy consistency.

Allow to sit for 20 minutes to absorb excess moisture, and consistency should now be clay like.

Using two dessert spoons, fill one with felafel mix, using the side of bowl to level off. Dip back of empty spoon in sesame seeds (it must be moist for them to stick on) and tap onto felafel mix in other spoon.  This prevents you from using your hands, and you get a nice shape for frying.  (Not too round)  Deposit mix into frying pan in 1cm olive oil until golden.  Fry both sides.  (May be baked in hot oven)

Eat with salad and tahini sauce, in a lebanese rollup, with tabouli or make into larger thin patties and put into a bun with salad for a great vegie burger..
