Cupcake Mix
500g Cupcake mix
115ml water
3 eggs
Method: Place water, eggs and cupcake mix in that order in bowl of mixer. Blend for 1 min on low speed then scrape down. Mix on medium speed for 4 mins. Flavourings (eg Dutch Cocoa) can be added at this stage. Place into cupcake papers 1cm from the top and bake at 150C for approx 25-30 mins or until a skewer comes out clean when tested. Using a muffin pan helps to keep the shape.
If you want to keep the cupcakes for more than a day or so add 50ml vegetable oil to the mix. They freeze well un- iced.
Icing ideas: White Chocolate fudge icing, Choc Fudge icing or Whip n Ice – available from W&P. Otherwise use a butter cream. Top with sprinkles, cachous, pearls or any of our wide range of sugar decorations or mini candy shapes.
