Choc Mud Cake

500g Mud Cake Mix     2 eggs        125 ml Water          75 ml vegetable oil          1 tub Chocolate Paste (available here)


METHOD: Blend mix, eggs and water for one minute on low speed. Scrape down. Blend for a further 2 minutes on top speed. Add chocolate paste and oil and blend for a further one minute. DO NOT OVER MIX. Bake at 160 C for 40 minutes. (Slow down fan forced oven or turn off.) Best results are obtained if the cake is slightly uncooked in the center and left to cool in the tin after baking. To enhance flavour generously brush top of cake with a wash made up of equal parts of simple syrup and brandy or whiskey. Glaze with Ganache (see recipe).
Ingredients: Sugar, Wheat flour, Cocoa powder, Vegetable fat (vegetable oil, emulsifiers (322 soy, 471, 477), antioxidant (320)), Maltodextrin, Potato flour, Salt, Milk solids, Mineral Salts (450, 500), Flavour.
