Celebration Kit

Included  in kit:                          
Mixed Fruit 
Fruit Cake Mix

You need to add:
3 Eggs
250ml water
1-2 T Sherry, Rum or Brandy          

Method:               
Mix all dry ingredients together with a wooden spoon. Mix wet ingredients then combine them together and mix thoroughly. Place into a deep 21cm (9 or 10 inch) cake tin which has been lined with one layer of Bakers Paper. Make sure paper stands up around edge of tin to a height of about 10cm (4 in).  When folded over onto cake, it protects the top of the cake during cooking time. 
Bake in a slow oven, about 160C (slow down fan) for 3 hours, or until cooked when tested. Test after 2 hours. Try 145 Celsius if unable to turn off fan. When cooked, remove from tin and cool. Wrap cake tightly in fresh greaseproof paper then in foil; store in a cool dark place.  This cake will keep for six months.  Cover with almond paste or marzipan to seal in moisture if you wish.  Cover with plastic icing or royal icing close to time needed. Ingredients: Sultanas, Raisins, Currants, Mixed Peel, Cherries, Flour, Sucrose, Vegetable Fat, Emulsifier(471), Baking Powder, Caramel(150),  Spice, Whey Solids, Non-Fat milk solids, Flavour, Salt, Preservative(202), Vegetable Gum(415).
