G/F Blueberry Muffins


Ingredients:1 1/4 cups maize corn flour       
1 1/4  cups soya flour        
2 tsp gluten free baking powder (from W&P)         
1/2  teaspoon cinnamon              
1/3 cup sugar                  
2 cups dried blueberries               
1 egg           
1 cup soy milk               
3 tablespoons melted margarine 

Method: Sift flours, baking powder and cinnamon into a medium bowl. Fold in the sugar and blueberries. Combine margarine, egg and soy milk and lightly mix liquid ingredients into dry ingredients. Spoon mixture into lightly greased muffin tins. Bake at 200ºC for 20 to 25 minutes
