Weigh 'n Pay Amaranth Gravy

Recipe:

GRAVY  (from Amaranth Flour Mix)
 
Makes 1 cup
1 tablespoon fat from meat drippings
4 tablespoons amaranth flour mix
1 cup stock                              Salt & pepper to taste
Caramel for colouring
Brown fat to give colour to gravy. Place all ingredients in a blender and blend. Pour into a baking dish or saucepan and
bring to the boil. Stir using a wooden spoon for 1 minute.
Colour up using caramel or other products.
To make caramel colour:
Place 1 cup of brown sugar in a saucepan and add 1 tablespoon of water. Heat and stir over a slow heat until it turns a deep rich brown colour. Add 1 cup of boiling water slowly and simmer for 20 minutes. Cool, bottle, seal and refrigerate and use when
required.
