Weigh 'n Pay Couscous Salad

Recipe:

GREEK STYLE COUSCOUS SALAD
1 cup couscous
1/3 cup fresh lemon juice
1 ½ Tblsp. red wine vinegar
2 garlic cloves, minced
½ tsp. dry mustard
¼ cup light olive oil
4 spring onions, chopped (include half of green section)
1 cup cooked chick peas
½ cup sliced black olives
¼ cup fresh parsley, chopped
1 Tblspn mint leaves, chopped
125g feta cheese, crumbled.
 
Place couscous in a bowl, cover with hot water to 6 ml. above couscous.
Leave until water is absorbed, about 8 min, then fork couscous into salad bowl, making sure all ingredients are separated.
Mix lemon juice, garlic, vinegar and mustard in small bowl, then whisk in oil. Add spring onions, olives, chick peas, parsley and mint to couscous, mixing all ingredients well.
Add salad dressing, toss well, then sprinkle crumbled feta on top. Refrigerate until needed.
