CHAAT MASALA
5 tbsp ground cumin
4 tbsp sea salt
12/3 tbsp ground fennel
1 tbsp garam masala
1 pinch asafoetida
1 pinch kasmiri chilli powder
This is an Indian ‘All purpose sprinkle’ and because of its high salt content it is used to season potatoes (chaats), fried pulses (such as chick peas) and adds an authentic fragrance to curries instead of using plain salt.
