How to cover a fruit cake with Plastic (RTR) Icing: If you are not sure how much you need please ask and we will help. If you want to use Almond Icing it is best done a day before to let it dry out. Knead the plastic icing to make it pliable, (you can microwave it for 20 seconds if necessary to soften it). Brush cake with warmed apricot jam or honey to enable the icing to stick to the cake. Roll the icing out like pastry, using icing sugar (not flour!) if it sticks. Make it large enough to cover the cake top & sides and lift it over the cake. Gently smooth the icing over the cake and down the sides, turning the excess icing outwards. Trim the icing just a little bit longer than the cake and tuck underneath to give a neat finish. The icing can be coloured using chocolate paste or colouring pastes (available from (W&P). Just knead in the paste and use gloves to avoid your hands becoming stained.
