Low Fat Fruitcake
Recipe:
Low Fat Fruit Cake
500g mixed fruit
250ml apricot nectar
1tsp honey
1 cup mashed pumpkin
225g self raising flour
1tsp mixed spice
1tsp bicarb soda
Grease a 14cm X 21cm loaf pan and cover base with bakers paper.
Combine fruit, nectar and honey in a medium pan & bring to the boil. Reduce heat and simmer uncovered for a further 3 minutes. Transfer to a bowl, cool. Stir in pumpkin, flour spice and bi carb. Spread mixture into the prepared pan. Bake in a moderate oven (180C) for about 1 hour. Cover with foil and cool in the pan.
