Recipe:
Included in kit: You need to add:
1 cup fresh bread or cake crumbs
1.5kg Mixed Fruit 3 eggs
500g Fruit Cake Mix 250mls water or fruit juice
50g Flaked Almonds 1-2 tblspns sherry, rum or brandy
Place dry ingredients into a large bowl and mix well. Beat eggs, brandy and juice together. Pack into a large greased pudding basin. (Or two smaller ones) Cover with greaseproof or bakers paper and foil. Tie securely with string and trim off excess paper and foil. Place in steamer and pour boiling water into steamer, halfway up the side of the basin. Cover with lid. Steam for six hours, adding water to maintain water level as necessary. Serve with brandy butter or cream.
If using a pressure cooker, steam without bringing to pressure for 20 minutes on a low heat. Bring to pressure and cook with 15lb weight for 2 hours. Serves about 15.
